Minestrone soup

  • 1.5 Litres Vegetable stock
  • 1 cup egg noodles
  • 1 cup ‘McEnZie brand’ Italian style soup mix
  • 1 Heap Tbsp tomato paste
  • 1 large onion diced
  • 2 carrots diced
  • 1/2 Leek thinly sliced
  • 1 celery stalk sliced
  • 2 potatoes diced
  • 1 Tsp dried parsley
  • 3 Garlic clover crushed
  • Fresh parsley chopped
  • Beef rashers crisped in the oven (optional)

  1. In a small saucepan add the cup of soup mix with 3 cups water and allow to cook and come to a boil until mix has softened.
  2. In a pot heat a little oil and add all the prepped veggies with the garlic and fry off until veggies have slightly softened.
  3. Add in the egg noodles and tomato paste mix really well.
  4. Pour over the stock. Sprinkle in the dried parsley and salt + pepper.
  5. Allow to simmer for approx 15-20mins if you would like the consistency to be thinner then pour over some more water.
  6. Sprinkle in fresh parsley. Once mix and veggies are completely cooked, ladle into soup bowls, top with the crispy beef rashers & serve with a side of crusty bread for a warm and hearty Autumn + Winter dish.
