• 500 Grams Mussels ( cleaned & washed )
  • 500 Grams prawns (Tails in tact)
  • 1 jar sun dried tomato pesto
  • 600 ml thickened cream
  • 1 Tbsp tomato paste
  • Punnet sliced mushrooms
  • 1 Spanish onion finely diced
  • 3 cloves garlic crushed
  • 1small red chilli ( crushed with the garlic)
  • 1/2 cup Kalamata olives (Pitted)
  • 1/2 cup cherry Tomatoes (Whole)
  • Handful of roughly chopped basil
  • Handful chopped fresh parsley
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 2 Tbsp Italian Herbs
  • Salt & pepper
  • 1 pkt fresh Linguine pasta OR Fettuccine

  1. Place a large pot of salted water on high heat till water reaches boiling point.
  2. In the meantime, in a skillet or wok heat a Tbsp of olive oil.
  3. Sauté the minced garlic & chilli with the mushrooms & onions.
  4. Once fragrant add the jar of pesto and stir well. Pour in the thickened cream- stirring really well- add tomato paste.
  5. Add all your herbs followed by the prawns and mussels.
  6. Allow to simmer & cook until prawns have turned orange and mussel shells have opened.
  7. Season with salt and pepper to taste. Add your olives + tomatoes.
  8. Sprinkle the fresh basil and store well. Once pasta water has come to a boil… add the fresh pasta and cook as packet instructions. Once done, drain and add the the sauce. Mixing really well to coat with the sauce.
  9. Sprinkle the fresh parsley and mix really well.

Serve immediately & Enjoy!
