‘Balela’ Salad!

Serves 6

  • 1 can Black beans Rinsed
  • 1 can Chick peas Rinsed
  • 1 can Red kidney beans Rinsed
  • 1 punnet Mixed Cherry tomatoes 
  • 1 small red onion diced
  • 8-10 kalamata olives sliced in half
  • 1 cucumber diced
  • Sun dried tomatoes (in olive oil) sliced in strips (amount is to your liking)
  • Feta cheese 
  • 1/2 cup fresh parsley chopped
  • 6 mint leaves chopped
  • 2 Dill stalks chopped


  • 1 lemon Juiced
  • 2 Tbsp olive oil
  • 1 Tsp dried oregano
  • Salt
  • 2 Tbsp Apple cider Vinegar OR white vinegar.
  • A little water to help balance flavours

  1. Place all prepared vegetables into a bowl.
  2. Pour dressing, mix well and top with crumbed feta.
