Chicken schnitzels!

  • 1kg Chicken breast fillets
  • 1 cup Breadcrumbs
  • Chopped parsley
  • Parmesan cheese (grated)
  • 2 eggs (whisked)
  • 1/2 cup plain flour

  1. Prepare 3 plates for the flour, eggs & breadcrumbs.
  2. Mix parsley & Parmesan into the breadcrumbs.
  3. Coat each fillet into flour, then the egg wash then largely the breadcrumb mix. Repeat for all pieces.
  4. To cook the schnitzels is totally upto your preference. The oven, grill or pan fry!
