Shakshuka (eggs cooked in a tomato sauce)


•1 onion diced

•punnet sliced mushroom

•red capsicum finely diced 

•2Tbsp tomato paste

•2cans diced tomatoes




• 5eggs

Firstly, finely dice an onion and cook until the onions are translucent add some finely diced mushroom & capsicum and allow to sauté till softened. Add a little tomato paste, mix and further add 2 cans of diced tomatoes- I used 1 can that had basil and oregano flavoured and another that was garlic. Mix through and add salt, pepper, cumin, paprika (chilli powder) if you want the kick. Allow to simmer until reduced. Make little holes with your spatula and crack an egg in each hole you make. Cover with the lid of the pan and allow to cook till eggs are ready. Garnish with parsley and serve with some crusty bread. Delish👌
