Pie pie pie… Who doesn’t like pie? Whoever says they don’t like pie-it’s a big fat lie LOL!
Warm hearty meals during winter/Autumn are an absolute MUST!
I decided to make single serve cottage pies with assorted top layers.
I’ve also made mini cottage pies which were a huge hit with the kiddies.
Recipe is as follows…
🔸peas, carrots & corn
🔸gravy (dissolved 2Tbsp)
🔸tomato paste (3Tbsp)
🔸dried herbs (Thyme, oregano)
🔸salt & pepper
🔸frozen short crust pastry
🔸vegeta gourmet stock
1.) Firstly, peel and place potatoes in a saucepan and bring to a boil.
2.) heat a little oil in a skillet and add the mincemeat, break apart and add onion.
Mix through till onions are translucent.
3.) following by adding the vegetables and mix through till cooked.
4.) once vegetables have cooked through add dried herbs & seasoning aswell as worcestshire sauce & tomatoe paste.
5.) dissolve the gravy into hot water and add to meat mix. Allow to simmer on low.
6.) In the meantime, mash the potatoes adding a little milk and butter and season with vegeta gourmet stock and pepper. Keep stiring till consistency becomes silky smooth.
7.) Cut up pastry into squares and lay into a pie dish.Add some of the meat mix topped with mash potato.
8.) place in the oven till cooked through.
