Serves 6

Cooking time 40mins

Prep time 15mins

-chicken breast fillets

-x3 600ml thickened cream

-2 heap Tbsp whole grain mustard

-sundried tomatoes

-mushrooms sliced

-onion diced

-x2 garlic cloves minced

-green peas 

-beef rashers sliced 

-salt & pepper

-pepper gravy powder dissolved

– all purpose seasoning

1.) drizzle a little olive oil onto a baking dish and coat the chicken fillets into the olive oil. Sprinkle salt, pepper and all purpose seasoning. Place in the oven covered for 12mins and uncovered for a further 9mins or till cooked through.

2.) while the chicken is in the oven, prep other ingredients. In a skillet heat a little olive oil and add the garlic, onion and mushroom and sautè till garlic is fragrant. Add the rashers,sundried tomato & peas also the mustard &mix through.

3.) pour the thickened cream and mix really well. Add the pepper heavy to help thicken the cream. Season and adjust to desired taste.

4.) once the chicken has finished add to the cream and allow to simmer to allow the chicken to absorb the flavours from the cream. 

Serve with a side of vegetable rice or mash.
