The classic ‘spaghetti Bol’ dish- I’m pretty sure it’s a favourite amongst all families. I’ll be quite surprised if it weren’t!
Today, was a pretty busy day- I tend to have a incurable illness of ‘Mondayitis’… So I call it.
The struggle of ‘Monday’s’ is absolutely real! Where energy levels are at their lowest, the dark circles around the eyes ( I always regret not going to bed earlier Sunday night), the endless list of errands, the never ending washing that needs to be done etc etc etc…
So after the struggle of actually getting OUT of bed- while making lunches for school, I thought I shall try and make my day a little easier by simply asking what my daughters wanted for dinner… Within 30 secs of asking they hit me with ‘spaghetti Bolognese’ – I was like Hey! I’m not going to say no to that!
Firstly, it’s absolutely DELICIOUS!
Secondly, it’s super quick and easy!
Thirdly, I can make this meal for 2 days 🙊🙈😇 lol!
So basically, it was a win win for all of us.
So following is my recipe for this Delish meal…
-1 kg mince meat
-2 cloves crushed garlic
-1 diced onion
-3 stalks of finely diced celery
-3 finely diced carrot
-fresh chopped basil
-3 bay leaves
-2 passata jar
-tomato paste (measurements depend on how thick you want the sauce)
-1 can diced tomato
-1 cup stock (of your choice)
-salt & pepper
1.) heat oil in a skillet saute onion, garlic carrot & celery for a few minutes add your mince and cook through.
2.) add your dried herbs followed by 1 cup of stock and tomato past to thicken.
3.) add your jars of passata store and season with salt & pepper.
4.) add fresh basil leaving a few leaves for garnishing.
5.) allow to simmer for 5-8mins then mix with pasta, sprinkle with Parmesan cheese & garnish with fresh basil leaves.
