🍖Tuscan style chicken🍖

•1kg chicken diced or thigh fillets
•2garlic Cloves minced
•3 cans diced tomatoes
• 2 Tbsp tomato paste
•Kalamatta olive (whole-pitted)
•2 cans cannellini beans (washed & rinsed)
•salt & pepper
•fresh parsley chopped
1.) heat 1 Tbsp of olive oil in a skillet & cook the chicken till golden or till cooked through,once done set aside.
2.) heat another 1 Tbsp of oil and add the onion and minced garlic- sautè till fragrant. Add the mushrooms and further cook for 2-3mins stiring.
3.) pour over cans of diced tomatoes,beans,olives & tomato paste to help thicken.
4.) also season and add all herbs. Tweak the measurements of the herbs according to your liking.
5.) return cooked to chicken to skillet and mix through. Allow to simmer for a further 5 mins.
🍽 Cauliflower bake 🍽
•Large cauliflower head cut into florets.
•salt & pepper
•1/2 cup breadcrumbs
•toasted sunflower seeds
1.) cut up your cauliflower into florets.
2.) lay in a oven proof dish.
3.) mix through olive oil and ensure the cauliflower is coated well.
4.) add the breadcrumbs,paprika,garlic minced,garlic powder,thyme and salt and pepper.
5.) mix through making sure cauliflower is coated well with the herb mix.
6.) place in the oven on 180degress for 30-40mins or until cooked through and cauliflower has become crispy on its surface.
7.) once they’re done take out of the oven pour over the whisked egg mixture and return back to the oven for a further 5 mins or until the egg is cooked.
8.) garnish with fresh herbs & toasted sunflower seeds.
Serve immediately while still hot!
